Chips, fries linked to heart disease?

Polish researchers gave study volunteers large amounts of potato chips over a four week period, increasing their daily intake of acrylamide.

Researchers found negative changes in participants' cholesterol, inflammation and anti-oxidant levels. Those changes could increase the risk of heart disease.

Previous research has also linked acrylamide to certain cancers.
