ESPN Zone BBQ Ribs

  • 2 Racks Pork Ribs (lean)
  • 1 Cup BBQ Sauce
  • 1/2 Cup Canola Oil
  • 1/3 Cup Red Wine Vinegar
  • 2 Tbsp Fresh Garlic (chopped)
  • 1 Fresh Jalapeño (minced)
  • 2 Tbsp Kosher Salt
  • 2 tsp Chili Powder
  • 1/3 Cup Fresh Cilantro (chopped)
  • 1/3 Cup Fresh Parsley (chopped)

Combine oil, red wine vinegar, chopped garlic, minced jalapeños, kosher salt, chili powder, chopped cilantro and parsley. Pour half of the marinade over the ribs and turn to coat other side; set aside remaining marinade. Marinate in refrigerator for at least 4 hours (up to 24 hours).

Preheat oven to 350 degrees. Place marinated ribs onto a sheet of aluminum foil that is one and a half times the length of the ribs. Place the ribs in the center of the foil and fold over to create a seal around the ribs.

Place the ribs on a sheet pan and cook in the oven for approximately 1 hour and 45 minutes.

Remove the ribs from the oven and carefully open the aluminum foil. Drain the drippings into the reserved marinade. Add the BBQ sauce to the marinade and whisk to combine.

Place on grill, baste, cover, and cook for 5 minutes per side.

ESPN Zone Cajun Chicken Sandwich

  • 4 8 Oz Chicken Breast (boneless, skinless)
  • 1 Cup Cajun Seasoning (Paul Prudhomme)
  • 1/2 Cup Olive Oil
  • 1 White Onion
  • 1 Red Bell Pepper
  • 8 Slices Pepperjack Cheese
  • 1/2Cup Jalapeños (sliced)
  • ½ Cup Chipotle Mayonnaise
  • 4 Burger Buns

Combine Cajun seasoning with olive oil in a bowl and whisk to combine.

Add chicken breasts to the bowl and coat well.

Cut onion and red pepper into ¼ " strips. Sauté in a pan with 2 Tbsp of olive oil until soft.

Place chicken on a grill and cook until done (165 internal temperature).

Place ¼ Cup of onion/pepper mixture on top of the chicken breasts followed by 5-6 slices of jalapeños and 2 slices of pepperjack cheese. Continue to grill until cheese is melted.

Spread chipotle mayonnaise on bottom bun. Place grilled breast on bottom bun followed by top bun.

ESPN Zone Chipotle Mayonnaise

  • 1 Cup Mayonnaise
  • 1 Tbsp Chipotle Peppers (pureed)

In a mixing bowl, combine pureed chipotle peppers with mayonnaise.

ESPN Zone Garlic Slaw

  • 1 Lb Red/Green Cabbage Mix
  • 1 Cup Carrots (shredded)
  • 1 Cup Red Onions (sliced)
  • 2 Oz Garlic (chopped)
  • 1/3 Oz Red Wine Vinegar
  • 1/3 Oz Olive Oil
  • 1 tsp Black Pepper
  • 1 Tbsp Sugar
  • 1 Tbsp Kosher Salt
  • 1/4 Cup Parsley (chopped)

In a large bowl, combine cabbage mix, carrots, onions, parsley, and garlic.

In a food processor, add the red wine vinegar, olive oil, black pepper, sugar, salt and combine thoroughly.

Add dressing to the cabbage mixture 5 minutes prior to serving.
