"In Japan, especially in Tokyo, people get off work at 6pm or 7pm, and after that they go to the bar to eat food and drink in a tiny, like tapas bar," said Hiromichi Igarash, chef and co-founder of Gyoza Bar. He tries to replicate that culture and menu. "I've been to Tokyo, and this is very similar," said Jason Vo from Irvine, California. "It's a small setting where you get lots of interaction with the chefs and the service. It's intimate and the food's good."
