Christmas cookie recipe from Leslie Sykes

LESLIE'S CHRISTMAS COOKIES

2 ½ sticks unsalted butter (room temp)
1 Cup sugar
1 pinch salt
4 large egg yolks (room temp)
1 teaspoon lemon zest
1 teaspoon vanilla extract
3 Cups all-purpose flour

Blend butter, sugar and salt. Add egg yolks, lemon zest and vanilla and blend. Add flour and mix until just blended. Divide cookie dough into three portions and wrap each in plastic wrap. Chill. Take chilled dough and roll out with rolling pin. Take your favorite cookie cutters and press into shapes. Place cookies on parchment paper-lined cookie sheets. Bake in 350 degree oven until done. Let cookies cool completely before you frost them.

VANILLA BUTTERCREAM FROSTING

3 Cups powdered sugar
1/3 Cup softened butter
1 ½ teaspoon vanilla
2 Tablespoons milk

Blend powdered sugar and butter together in mixing bowl. Add vanilla and milk. Blend until it looks like frosting. Divide frosting into little bowls and add food coloring to each. Mix and use to decorate cooled cookies.
